When you start clean eating, it doesn’t take long for you to start feeling a little deprived. Thankfully, I’ve always loved food, hoarded cookbooks, and been an adventurous cook.
Over the years, I’ve learned the ropes and figured out tips and tricks from a few sources like Marlene Koch’s series of cookbooks Eat What You Love, Dr. Mark Hyman’s UltraMetabolism (side note: Both are fantastic and if you’re looking for a place to start with your foray into healthful cooking, go with EWYL; if you have random allergies and don’t know from whence they came, get UM), and of course, the Beachbody Blog.
ANYWAY, every so often when I’m on a clean eating program (ask me about how much I’m loving 2B Mindset!), I get a serious hankering for something not-so-clean that I would have previously eaten with reckless abandon.
This weekend, it was a smoked salmon BLT wrap I love to get at Union Market from Neopol Savory Smokery that my friend Sam introduced me to last fall and hoo-boy is it divine. Neopol specializes in smoking fish and meats so believe me when I say that the combo of their salmon and bacon is absolutely heavenly.
But, I’m trying my hardest to make sure I know what goes in my food. And as much as I love Neopol, I can’t justify consuming that much mayonnaise. So, here I was with a challenge on my hand.
I picked up some smoked salmon at the store—no where near as good as Neopol’s, but good enough for an at-home experiment. And while I was there, I couldn’t resist some gorgeously seedy bake-at-home, whole wheat bread.This one was pretty simple with substituting the mayo with plain Greek yogurt. Then I added some spices to kick it up a notch. I would say the result looked pretty enticing.
Smoked Salmon BLT
Serves 2
6 oz. smoked salmon, torn into small pieces
1/2 cup plain Greek yogurt
1/2 tsp. lemon juice
1/2 tsp. black pepper
1/4 tsp. white pepper
1/4 tsp. dried parsley
Bread/bagel/wrap/whatever
Lettuce
Tomato
1-2 slices of bacon
Directions:
Take all the ingredients above “bread” and mix together in a bowl. Spread it on the carb of your choice and top with the L&T.
In the effort of full disclosure, this is actually my boyfriend’s sandwich. Mine went into a whole wheat wrap to keep my carb intake at an appropriate level.
And, YES, that’s real bacon. Sometimes in life, you need to ditch the turkey bacon and go for the real stuff. Like when you’re home for a four-day weekend anxiously awaiting your best friend from law school to visit you for the first time in years or when it’s a lazy Saturday and you just need some damn bacon.
That being said, if it’s something you’re multiplying to eat all week, maybe stick to the turkey bacon. It will taste just as delicious, I assure you.
